The idea of this concept is to shorten the distance between the farm and your dinner plate. Our guests also be able to harvest our organic heirloom veggies directly from our permaculture garden or simply buy them at Mana Market.

We offer a unique culinary experience where Indonesian spices and Japanese superfoods come together in a harmonious fusion of flavors and textures. Our Indo-Japanese cuisine features a wide range of dishes that are inspired by the traditional flavors of Indonesia and the ancient knowledge of Japanese superfoods.

How do you keep your kitchen operation low impact?

Mana Kitchen is dedicated to being regenerative and environmentally friendly. We use renewable energy sources such as solar lights, filtered rainwater, and recycled materials, including reclaimed wood from around Indonesia, in all aspects of our operation.

Yasuhiro Higa

An expert in macrobiotic cooking and the connection between food and health, leads our menu creation. He's from Okinawa, trained in French cuisine, and has traveled across Japan.

This is his first project abroad and he finds inspiration in the similarities between rural Okinawa and Bali. He's also working with cancer doctors to create nourishing food. Yasuhiro supports local food producers and businesses to showcase unique, locally grown produce.

How to keep your delivery order low impact?

We use this plaited bamboo container is called "Besek" in Indonesia, a traditional packaging that has been used since the 12th century as a food container. Inside each besek, banana leaves are folded in different ways as food wrapping and packaging!
